So in the dueling sword skill line, it specifically states
To gain these benefits, you must be wielding only a dueling sword (not using a shield, an off-hand weapon, armor spikes, unarmed strikes, or natural weapons).
the entire feat chain states this, I was wondering if that meant you RAW can not actually use these feats with say a kata or sohei monk?

I believe the intent is that you can't be actively using anything but a dueling sword.
Otherwise, you could never actually use the feats, since everyone is always "armed" with unarmed strikes (even if they're not proficient with them).
As long as you refrain from making any unarmed strikes whatsoever, I think most GMs would give you the thumbs up. If you're trying to parry and reposte with unarmed strikes, however, I'd probably call you out on it.

It's funny, I just got the opposite response on a similar question a couple weeks ago here Dueling Mastery+Unarmed Strike.

Slightly different situation, as 'duelist of x' explicitly call out you cannot use unarmed strike etc. Aldori Dueling Mastery is more vaguely worded.
My view is nothing indicates you can't take the 'duelist of x' feats but that the feats become unusable as soon as you declare an unarmed strike, until you take a free action to start using them again.
