I'm thinking of playing a Paladin in our upcoming S.S. adventure who is obsessed with smiting evil= both for role playing and tactical optimization. So does this scenario support such a character- particularly in the later books?
For reference this would be my first time at Paladin, and IMO the other A.P. we did, Rise of the Rune Lords, would definitely have had enough evil opponents for my anti-evil plans.
For more reference, the homebrews we run typically have a preponderance of Neutral enemies and my plans would be thwarted.

Almost spoiled something major before seeing that you're the player. Whew!
There is a lot of evil to be punched in the face in this AP, but it also features a high volume of potential non-evil enemies as well. The majority are still evil though.
I'll just say that a paladin that is into smiting and diplomacy should almost always have something productive to do. Paladins that are smite-happy and scorn peaceful solutions will both find themselves unprepared in some fights and miss out on some potentially awesome developments.
Paladins of Shelyn and Sarenrae, as well as some more esoteric Empyreal Lord options, are an excellent fit for the campaign.

Depends on what you mean by obsessed with smiting evil. If that's the main reason you'd go on any given adventure, then I'd rate the character as largely unsuitable for the AP. There's a number of evil enemies, but the plot hooks are centered more around "go delve in an ancient ruin because you're an adventure archeologist who likes delving for the sake of it" that "there's a giant evil demon lord who needs killing".

Fun story. I played a pally on my first run of Shattered Star. (Once as a player, now I'm DMing a run of it with a different group.)
My Pally followed Sarenrae, who is moderately obsessed with redemption. So When stuff wasn't evil, but was still on the wrong side of things, I'd try and sit them down and talk about their life choices. Which ended up with some fantastically hilarious situations.
there are also plenty of unrepentingly evil funsies in the AP, but moreso toward the later books.
So if you want to play a more evangelical type pally, then I think it'd work great. But a Paladin of Torag might have some problems.
