Although it's hilarious imagining someone riding an invisible horse, just... moving through the air. Even better: a llama or camel. Or ostrich! :D
That makes me think of Wonder Woman riding around in her invisible jet during all of those Superfriends cartoons.

The backpack probably wouldn't work by hard-line RAW (though it might - I'm not brushed up on my illusion-fu enough to know for sure), and even with RAI there might be a conflict with "what counts as an attended object"... buuuuuuuuut, I could definitely see the "invisibility" being an "I coat the outside of this thing with images as if it weren't there", in which case being inside would work.
The other weird effect with the backpack-like thing would be if, say, you were inside a bag of holding or portable hole or something like that. I would definitely see that as working because 1) how does a GM adjucate the whole "You see more in a space than will fit in that space" thing otherwise and, more importantly, 2) you're not actually inside the item, but rather within an extradimensional space that the item opens up into - hence removed from (local) reality, after a fashion.
Also: hey! An hour and 29 minutes later, and I finally get to confirm that my post posted! ... ... ... I hate my shoddy weekend connection right now. >:(
