I'm a GM for my group and we were supposed to have a session today but 3 of my 5 people canceled, but the other 2 want to still play. Right now they are level 7 and are relaxing at Thristletop (they took it for there own). One of them is a barbarian (he fights like a Lucha/Wrestler) then the other one is an Ifrit sorcerer. I don't really know what I can do with the 2 of them, can anyone just get me started on an idea, please?

So where would the other 3 be in this situation?
Nursing a hang over in a jail cell, as well as some black eyes and broken beer bottle lacerations. Which can be the event that started your one off- these two are making bail/doing 'community service' with their little quest, thus freeing their friends.
The exact set up for this of course depends on the character/player personalities, but you get the general gist, no?

Varisia is supposed to be chock full of old Thassilonian ruins. You can run many a side-quest during the campaign by leaving clues to some nearby ruin, and basically do a one-shot for the 2 guys who are there, while the other three are lounging in thier base at Thistletop.
The only real issue is that players who are present for the one-shot(s) my wind up with more experience than the absent players, and may reach higher levels faster. Level disparity in a group sin't so bad, as long as it isn't more than one level, but anything more could create problems.

1) Thieves have made off with an item or items that are important to the PCs. They got away and split into two groups. The party decided to split up pursuit. (You can handwave the pursuit involving the other 3 PCs. They didn't have the mcguffin, were all mooks, surrendered immediately, etc.)
2) Barbarian hears tavern gossip that Monster X has been seen near town recently. Or hears rumors that a treasure is hidden in or near location Z.
3) Important NPC is taken ill with some specialized curse or disease PCs can't heal. Someone has to go get the antidote from another location.
Should be something you can work with there.

Sounds like you already have some good suggestions, but these are the times that random encounter tables were made for. Come up with a simple mission for the remaining players to undertake and send them out into the Inner Sea. Give them a random encounter or two and you're good for the night. I love digging into the Inner Sea NPC Codex to find a good NPC in the area near my PCs and then come up with an encounter for them. Coming up with adventures on the fly is easy once you start reverse engineering your PC's location with the wealth of Golarion material out there.

Ogre raid.
Ogres have made off with items/NPCs important to them. It could even be one of the non-present PCs.
Goal: Find them, kill them, retrieve objects/people.
What is your desired CR?
If you could that would be great the other 3 will all be back wednesday, desired is CR9-14. They are all lvl 7 but are becoming quite OP
