With all the holy stuffs going on, crosses and the likes, you might be better off with an inquisitor most of the time.
But anyway iconic Castlevania stuffs:
Change whip to do lethal damage...pretty much even if whips are basically impractical weapons but well this is fantasy anyway.
Anachronism: Plenty of it in pathfinder with the technology guide, go wild.
Beheaded monsters exist in pathfinder, so it's very easy to have the floating heads around the castle.
There is actually a grim reaper monster in pathfinder but well, the reaper is CR 20 might be a little too much, depending on what kind of campaign you are running.
Big weapons: Guess find a way for Belmont family people to have oversized weapons, maybe, they all have powerful build?
Witches, Sorceress etc: Virtually all the women tend to practice the dark arts.
Fireball traps everywhere...easy to do.

I really wanted to make Sonia Belmont as a character a couple years ago, but got sidetracked and forgot. Thinking about it now, I kind of like the idea of her as a Slayer, Ashleigh I'd need to come up with a whip combat style feat list that could be used in place of ranger styles. The subweapons could replace a few of the rouge talents.

I like Belmont as inquisitor, it also fits with the "determined hunter" theme and the light-to-no armor.
The flying medusa heads are a bit odd, not sure the best way to do them.
Holy cross boomerang is a returning weapon I suppose, The high-speed dagger seems like a difficult one to do, simply because of the number and speed you throw them at before running out of hearts.
Last 2 I played were Symphony of the Night (repackaged) and Portrait of Ruin, neither of which had a Belmont as the protagonist. Wider variety of weapons though.
And of course, we need rules for a miserable pile of secrets.

I know of ah fan made Pathfinder Castelvania adventure that has alot that could be helpful. Do you know the pathfinder ogc web site? There facebook group in its files has ah pdf for Castlevania Pathfinder. Its pretty good I must say. I have not played it but read over much it. If you want stats for monsters of Castlevania it has them and ah really good Castlevania story of the PC's battling to Castlevania to slay Dracula, and even has rules for PC's of Belmont blood line and the whip. Its also ah good read. If I remember anymore I need to tell you I will post it.

Doesn't the Whip Mastery combat feat allow a person to deal lethal damage with a whip despite the target's natural armor bonus (and also ignore attacks of opportunity)?
While Inquisitor makes sense for Belmonts (aka lightly armored heroes) does that class also give them access to Channel Energy somehow? I'm thinking the Grand Cross subitem crash is sort of like a cleric channeling Positive Energy (or the paladin's Warrior of the Holy Light archetype's shinning light ability).
Though I'm not sure how to handle the Holy Water thing. Are there feats or ways for some sort of divine class to draw holy water via the Quick Draw feat and throw it as a splash weapon without provoking attacks of opportunity? What about a spell that causes holy water to rain down in a radial burst centered on the caster?

It's good to see that there are Castlevania fans out there who haven't sided with that misogynist Igarashi and written the only female Belmont off completely yet. Good for you (you win a pumpkin frosted cookie). ^_^

I have done a Belmont build before, but with 3.5. With a warlock you can channel eldritch blast into a melee weapon, and there was a prestige class that basically was a holy warlock.
In pathfinder, I'd recommend warpriest like fel_horfrost as well - the scaling damage is really good for a whip. Inquisitor would also work, although they are less effective fighting undead imo.
