I am midway between 4 and 5 stars in terms of table credits and am looking to start getting in my Specials and Exclusives.
However, I must admit that I am a bit confused as to what exactly constitutes an Exclusive or Special.
Can someone list for me the current set of events that would qualify if I were to run them starting today up to the start of Season 7?

I believe it's considered just a normal scenario now. It's available for regular purchase, anyway.

I just asked my VC and he said he thought that Bonekeep was still venture officer only.
Is that not the case?
It was never VO only. It was con only at first, but anyone at the con could run it. Then it was made into an Exclusive, which meant VO and 4+ Star GMs only. It is still in that state.

Bonekeep 1 as the current exclusive is available to VOs and 4-5 star GMs to run anytime.
Bonekeep 2 can only be offered at approved events, and can only be run by VOs or 4-5 star GMs.
Bonekeep 3 can only be offered at approved events, and no GM restrictions have been posted at this time.
There has never been any events limited to just VOs. Limitations have always been set to 4-5 star GMs, while VOs can ignore star rating requirements.
I recall there being a discussion of Paths We Choose counting towards the Exclusive/Specials requirement for 5th Star, but I couldn't find a post with a definitive answer. Without the post confirming it counting, I decided to not include it on the list.

The failure of Mendev's wardstones set in motion not only a new crusade but also catalyzed a change in the Pathfinder Society's various factions. As the Pathfinders prepare to march on the Sky Citadel Jormurdun, members of the various factions scramble to consolidate their gains and neutralize their enemies. "The Paths We Choose" is a special event designed to highlight the changes in each faction over the course of Season 5, The Year of the Demon, and the adventure is different for each group depending on which factions are represented at the table. Content in "The Paths We Choose" also contributes directly to the ongoing storylines of the Andoran, Cheliax, Osirion, Qadira, Sczarni, and Taldor factions. This adventure kicks off Season 6, The Year of the Sky Key and is for character levels 3-7.

It would be nice to get some official clarification on "The Paths We Choose" since "Goblin Attack" was also a special event and was also only given to 4 star GMs and VOs, but I do not think it counts. I honestly hope it does count, but I would rather campaign leadership would be straight forward on this early to avoid disappointment later.

Goblin Attack, the Silverhex quests, and the Beginner Box missions for Adults and Kids do not count toward the 10 Exclusive/Special requirement to get 5 stars. They are Demos. It was announced a while ago that Goblin Attack would be distributed to VOs and 4-5 star GMs for free.
These games do count towards total tables run for GMs that run them, so they help meet the 150 GM sessions requirement for 5 stars.

I would like The Paths We Choose to count as a special, but since it does not say as such in the reporting list, I would say it is not until a clarification is issued.
I believe that John Compton, when he agreed to removing the minimum table limit for The Paths We Choose, to allow it to be run for Game Days and smaller groups, said it would still count as a Special. Not sure where that got posted, and working from my antique memory, so it may not be worth much.

And I think Year of the Shadow Lodge has the next-lowest table minimum with 3. Does everything else require 4+ tables or 5-stars?

All 3 Bonekeeps can be run for your exclusive count.
Everything else does require 4 or 5 tables, or 5 stars to run.
I read somewhere that VC's count as +2 stars and VL's count as +1 stars towards that minimum...not sure if VA's count as VL's for that or not. Been out of the loop for about a year now.

All Bonekeeps are 4+ Star GMs or VOs of any star rating
True Dragons of Absalom is 5 Star GMs only
Serpents Rise is 4+ Star GMs only
(For True Dragons and Serpent's Rise VOs can't ignore star requirement. VCs count as +2stars higher, VLs count as +1 star higher, VAs do not get an adjustment to their Star rating.)
Multi Table Specials can be GMed by anyone, and the only requirement is being able to run the minimum number of tables simultaneously.
Year of the Shadow Lodge - 3 tables
Blood Under Absalom - 5 tables
Race for the Runecarved Key - 4 tables
Siege of the Diamond City - 5 tables
Legacy of the Stone Lords - 5 tables
Siege of Serpents - 5 tables
The Sky Key Solution - 5 tables.
