To cast a spell when beginning the initiative pass with a 2 handed weapon equipped, I assume one can spend a free action to 'de-equip' it by removing one hand and simply gripping the weapon (as opposed to having it 'equipped') in the other hand. This is done in order to satisfy the free hand requirement for a somatic spell.. as opposed to spending a free action to drop the weapon entirely.
Assuming that's correct, is it still a move action to re-ready/re-equip the weapon prior to making attacks with it?
If so, is that also true for bows?

Nicos is correct. It is a free action to let go of the two-hander with one hand, then whatever the spell casting action is, usually a standard, then a free action to change grips back to two-handing the staff.
Note that some spells won't be usable when they normally would be if the weapon is equipped, like Liberating Command or other Immediate Action spells like Feather Fall.
Also note that, if the spell is a full round casting time, that your hand wouldn't be free to go back on the staff until your next turn.
And, as a last reminder, you cannot use a two-handed weapon and Spell Combat together, due to how Spell Combat is written. Also note, though, that you can still use the weapon to use Spellstrike with, but it would just be the free action same-round attack to deliver a touch spell.

That's a great point. It looks like the staff magus archetype is intended to use spell combat while using the quarterstaff one handed (thanks to the quarterstaff mastery feat).
