Say I'm a Dwarf with Darkvision, if I alter myself into a humer I'd get +2str and a base move speed of 30'. Thematically, it would make sense that I no longer have darkvision.
But RAW (unless it's covered in the polymorph section and thus is implied here) it says you gain the following abilities if you change into something that has it. It doesn't say anything about losing something you already have.

From the description of how Polymorph works in the Core book:
While under the effects of a polymorph spell, you lose all extraordinary and supernatural abilities that depend on your original form (such as keen senses, scent, and darkvision), as well as any natural attacks and movement types possessed by your original form.
You also lose any class features that depend upon form, but those that allow you to add features (such as sorcerers that can grow claws) still function.
While most of these should be obvious, the GM is the final arbiter of what abilities depend on form and are lost when a new form is assumed.
Your new form might restore a number of these abilities if they are possessed by the new form.

The point of the spell, I think, is to alter the parts of your body to help in a situation. That is why, I would think, it doesn't say "loose."
It doesn't say that you gain the 30' move speed. It only adds to your strength.
This is a very good question though. Do you still get the bonus from turning from a medium character to a medium character, or was it intended to be bonuses from when you go from medium to small or vise versa? If you go from small to medium do you loose your AC bonus?
I would say that the magic is about enhancing yourself. That is why the crazy wizards of old created it. So, even if you go from medium to medium you still get the strength bonus. Because you are altering your body to be powerful, while from small to small you are altering your body to be quick and unnoticeable.

You're right, I saw the "swim 30'" at a glance and assumed it was talking about move speed"

Right, human -> human = +2 str because you're just making yourself a strong human for the time being (albeit a random-looking one that doesn't necessarily resemble yourself).

If a polymorph spell causes you to change size, apply the size modifiers appropriately, changing your armor class, attack bonus, Combat Maneuver Bonus, and Stealth skill modifiers. Your ability scores are not modified by this change unless noted by the spell.
When you cast this spell, you can assume the form of any Small or Medium creature of the humanoid type.
So, yes, you do actually change sizes. This is a transmuation spell, not an illusion spell. When you change sizes, you gain the listed benefits of being that size - just not the stat adjustments unless otherwise noted. AS notes that you either gain +2 STR or +2 DEX, depending on the size you become.

Polymorphing effects convey the base movement that is why it is never listed.
A dwarf using AS to turn into a human would loose dark vision and probably stability (going off memory).
Which is really weird when you consider that many such spells spell out the granting of swim, fly and climb speeds.
