I was playing a game recently and Valeros got 3 weapons in his hand.
I was only revealing 2 (a longsword and mace) but could I have revealed all 3 in one combat?
I know you cannot add any card more than once, but I can't find a restriction on playing multiple cards. In fact, one of the examples in the FAQ shows a player using 2 of the same card (not blessing) on one check.

From the FAQ:
Can I reveal two Belts of Incredible Dexterity over and over to add ∞ to my Dexterity?
Of course not. Any specific card's power can be activated once per check or step, and then it can't do that again until the next time you do something. So you cannot reveal a single Belt of Incredible Dexterity twice to add 2 to your Dexterity check, but you could reveal two copies once each; similarly, you cannot reveal a single Magic Shield three times to reduce a single instance of Combat damage dealt to you by 6, but you could reveal it once to reduce “before the encounter” combat damage dealt by a Scout, and then reveal it a second time to reduce Combat damage if you fail to defeat the Scout.
Resolution: On page 9 of the Rulebook, under Playing Cards, add the following sentence to the definition of Reveal: "You may not reveal the same card for its power more than once per check or step."

Having not seen it in play yet, I'm supposed to know that, how?
I haven't used any of the cards from the RotR Adventure Path. Just the base cards.Not to mention Valeros' own art shows him wielding 2 weapons.
Maybe the next version of him will give him a power to wield 2 weapons.

The basic rules say that you can only play one card of each type per check.
Certain cards provide exceptions to that rule. A good example from the base set is the Wooden Shield: you can play that with another armor. As for weapons, Daggers can be used in combination with other weapons (as the card states), so feel free to let Valeros use Longsword and Dagger. (As for Valeros' art, that's the iconic Valeros drawing from the RPG.)

You can use 2 weapons in certain cases. A longsword and dagger for instance. In that case you are using the dagger's second power, which says you have to have played another weapon on the check, thus allowing you to break the limit on cards of each type. The are some more powerful weapons later in the adventure path that do similar things.
