the requirement to be an evangelist (or either of the other two new prestige classes in Inner Sea Gods) requires that you "worship a single, specific deity". However my characters are all polytheistic. Is it ok to simply have a main deity while still worshipping others as well or is this only for monotheists?
personally, just so long as you stick to one set of boons, I don't see any problem with worshipping more than one god.

The intention of the three prestige classes and the devotions is indeed that they are for characters who worship a single deity.
That said, it's not gonna break the game for your GM to houserule it so that a polytheist could take the class... although you'll still likely have to pick ONE of the deities in that group to be the one that is your favored deity... at which point you're drifting away from polytheistic beliefs perhaps...

Eh, no different than greeks and some mystery cults isn't it? What would be really weird is if mystery cults were only good aligned.

I don't really understand how Golarions aren't polytheists. I mean, all of the gods are objectively proved to exist and have power and influence over the world. It's just most people who make religion their focus pick a singular god as their patron and the source of their abilities. The Oracle of Delphi getting her powers from Apollo doesn't mean she can't pay her respects to Zeus and whatnot.
