The spell says "After it delivers a spell, or if it goes beyond the spell range or goes out of your sight, the hand returns to you and hovers."
Does it 'fly back to you'? This would imply it leaves the threatened square it delivered the touch attack from and invokes an AOO? Or should I assume it just teleports back or something?

It depends, the Spectral Hand spell, does says "The hand always strikes from your direction". Therefore if it enters the threat range of any enemy while traveling from you to your target it should provoke an AOO.
Remember it is incorporeal, so non-magical attacks can't even hurt it and it has quite high ac. A 22 + your Int mod.
That is pretty good for a level 2 spell.
If enemies don't even get a chance to take it out with an AOO, Spectral Hand would be way overpowered.

You are thinking to complex. The spell allows the caster to use touch spell with range very similar to the 'Reach' metamagic feat. Enemies can end this by attacking the hand.
The hand isnt a creature. It dosnt block squares neither it can flank. It is very weak if attack directly (the AC and incorporeal abilities are irrelevant at lvl 4+) and it has no listed movement speed. Without a movement speed it cannot move by RAW so it cannot provoke AoO by movement. It isnt a creature. It is a spell effect.
Does the bead of a fireball provoke AoOs?
