animal companion forms arent templete, so, cana druid wild shape, into lets say a medium size roc?
No you can't wild shape into Animal Companion stat blocks or templated creatures.
But they did make one archetype have an exception as a FAQ (only applies to Eagle Shaman) because they had several no-op class features without the special exemption. In the FAQ Eagle Shaman can apply some templates.

In PFS the answer is no, you can't turn into animal companion forms. You have to use the base creature stats.
In a home game, ask your GM. I allow druids to wild shape into any animal whose adult form is the appropriate size, as long as it exists on my world. So a druid could change into a pigeon even though we don't have stats for a pigeon. (A druid intent on pigeon form likely isn't going to be involved in combat). So if your GM decides that "pygmy rocs" exist I'd say go for it.
