What limits are imposed on these stat boost books?If for example I discover over the course of my adventures two Manuals of Gainful Exercise + 5, may I boost my constitution by +10 i.e. do they stack?
How about combining a Belt of Mighty Constitution + 6 and a Manual of Gainful Exercise + 4... would this give me a total benefit of +10 to Constitution?

In the first case, they would not be equivalent to a +10 bonus. The manuals of gainful exercise each give you a +5 Inherent Bonus. Bonuses of the same type do not stack, and in the case of inherent bonuses, they can never be more than +5.
In the second case, they would be equivalent to a +10 bonus. The manual provides a +4 Inherent Bonus and the belt provides a +6 enhancement bonus. They are bonuses of different types, so they do stack.

Manuals don't stack with each other above +5, being based on Wish (which also has that limitation). They stack fine with Belts and such, though.
It's generally cheaper to pay a caster in your party the 25k gold for a Wish then buy Manuals/Tomes. 125,000 gp v. 131,250 if you craft it or 137,500 if not. Or you get them to use Gate x 2 for 10,000 gp each and order the called Efreeti (x2) to just give you +5 with 5 wishes. Or you get them to use Planar Binding and order the Efreeti to do it free. Or you get them to cast Wish or Gate with Blood Money for even more frees.
