I'm trying to create the "drinky-est" cleric ever. Any advice on how to improve his adherence to theme would be appreciated.

Porthos is wise and affable, but he is nearly always tipsy and unsteady on his feet.

Charm Person (hey, buddy!), Calm Emotions (whoa, friend...let's talk this over), Fly (Whoo!)
Porthos is well traveled, having drank his way across the continent, and has many entertaining tales to tell.
Variant Channeling:
Ale/Wine
Porthos is able to project his drunkenness to enemies, or his iron stomach to friends.
Feats:
1) Combat Casting
1) Catch Off Guard
3) Selective Channeling
5) Improved Channeling
Porthos uses a huge table leg as his primary weapon (improvised weapon). He acquired the table leg when in a drinking contest with an Ettin. Hence the Catch Off Guard feat.
Selective Channeling and Improved Channeling are to improve his ability to nauseate his enemies while leaving his friends alone.
In the future I plan to give him the Throw Anything feat as well.

Am I missing anything, thematically or mechanically?

I'm sorry, I know you're not trying to build the Porthos, but I'm just about completely focused on the namesake here. And ignoring that Aramis was definitely the cleric of the group, one thing Porthos was almost never without was his servant/drinking buddy whose name I can't recall right now. So leadership might be a good one for this.
Edit: Porthos' servant's name was Mousqueton. Their relationship was one of a kind.

More Con always helps for imbibing large quantities of alcohol, though you're already doing rather well at 14. Still, it'd make a good excuse for further boosting via all the usual methods (belts, usually).
As for more specific items... A Tankard of the Drunken Hero is going to be your best friend, along with a Tengu Drinking Jug to fill it with. This helps you get some proper potency out of your Create Water orison, though you'll probably want to upgrade to a Drinking Horn of Bottomless Valor for unlimited booze, once you can afford it.
Alchemist's Kindness will help you get through the morning after your drunken escapades for 1 gp/dose, though a wand of Polypurpose Panacea is faster acting, and can help you get buzzed even when there aren't any good drinks around. In a truly dire situation, it can even make you sober... but if the situation's bad enough for your character to consider that, it's probably bad enough that you'd want to be drunk just to cope and/or not remember it. You'd have to UMD the wand, but with your 16 charisma and some ranks, it shouldn't be too big of an issue.

Nice concept.
I would probably take Selective channel at 1st lvl in place of Combat Casting, which is generally a wasted feat if you play your cards right.
Make sure you are chaotic Neutral, so that you qualify for Versatile Channeler. Take it at 5th lvl (improved channel at 3rd). Quick Channel after these feats.
See if you can fit Sacred Conduit as one of your traits.
Your stats need tweaking IMO.
First of all, a channeling focused cleric has Cha as his highest priority. If you cannot achieve a high Wisdom, you can still rely on spells that do not rewuire saving throws, like buffs.
Your Str is also not well placed. Unless you use a differnet stat for attack rolls, you need a much higher stat in order to be effeicient in combat. I suggest to drop it at 12, so that you can wear the heavier armors (buy a Muleback Cords if you need more carring capacity).
Also, 8 Dex is not one if the best choices you could do. AC and Reflex saves, while not critically important, are expensive to upgrade, so it is not wise to dismiss them so lightly. If you need to dump a stat, dump Int.
I assumed that it is some kind of point-buy, if it is not, I would put the stats like this:

CHA 20 (17+2+1)
My advice is for optimizing and not towards improving your concept. However, even if you follow everything I wrote, you will still have a very flavorful drink-buddy Cleric, with the added benefit of being more effective in combat.

Great concept :-) Note that, RAI and RAW, a Cleric of Cayden Cailean can never channel negative energy, regardless of alignment. It should be legal in that case, it makes perfect sense and has great thematic verisimilitude. I encourage you to politely ask your GM to house-rule it. Were I GMing in any context except PFS I would permit it.

This. See if the GM will house rule Channeling Negative energy for you. With the theme and (hopefully) ability to nauseate enemies with your channel, I'd go with a bad touch build. Drunken fun for everyone... and some touching... *wink, wink*.

Bummer. I'd assumed that both types of channeling were available in the same way that a good cleric could heal living creatures with one type of channel and harm undead ones with the other.
Maybe I'll have to go Chaotic Neutral and worship a neutral god of drinking. But then I loose the Fortified Drinker trait.
Hmm. I'm pretty sure I could talk my DM into making this work. But then I would essentially be cheating.

I always felt like with the variant channels, you should be able to choose negative or positive channeling... mostly because the 'harm' effects are usually above and beyond the the 'heal' ones; and it just works thematically.
The only other 'deity' I can think of at the moment with an alcohol theme is Halcamora... who is unfortunately NG. She's specifically an Empyreal Lord of wine. Would be interesting if you don't mind worshipping an anthropomorphic ladybug girl with a laid back surfer dude attidude that always carries a jug of divine wine everywhere.
