Any recommendations? I'm just trying to compile a basic list of ideas before I get to work building.
Just what do you want to do?
What level is this for?
It's really just a concept so any level. Basically whatever it takes to fully flesh it out. I'm thinking make him fight with nothing but armor spikes, charge through, trample, and Spiked Destroyer.
Is this a PC?
Are you the player, or are you making your players fight that?
Are you making them stop him from breaking the wall?
Seriously it's just a for fun build. I might bring it in a later game to show off for a bit but I doubt it will ever see actual long term use.

If 3.5 material is allowed check out the old Dungeonscape book for 'Dungeon Crashing'. It replaces the 2nd level and 6th level fighter feats but gives pretty nice bonuses to destroying walls, doors, gates and solid obstacles along with some massive damage if you bull rush opponents into something solid.
Combine with a large (or larger) race or a Powerful Build race and the Bull Rush feat chains and you get something similar to that video.
Hmm I'll have to check that out. But I'd like to stick to pathfinder stuff. All the extra pathfinder stuff is fine though.

Seems like a giant with a bunch of barbarian levels (with emphasis on DR and item destruction) would do the trick.
