There's an animal harness and a cage in ultimate equipment. I'd imagine any sort of rope or chain works too, though I'd imagine chaining up a rooster might be a little extreme. I'd imagine you could always teach it a trick or two. Does being taught to run and hide really well count as combat trained(kidding)?

Seems using a leash or cage would fall into the realm of GM common sense.
Beyond that owning a pet is best done as an exercise in Handle Animal.
My gravewalker witch has a pet hawk that he passes off as a familiar. He has developed handle animal to teach it tricks and get it to act like a familiar. He has actually become quite attached to it. But to get it originally trained to follow his commands, he hired a trainer.
Roosters, by the way, are notoriously vicious and dangerous critters.

My aunt used to keep chickens in her backyard, and her rooster was not afraid of ANYTHING. Freakin' thing used to chase myself and my cousins around all the time.
Years later, our next-door-neighbor had a rooster that chased cats and crowed every night at 2 AM.

On that note, how much is it to hire a trainer? If I want a combat trained dog, or "riding" dog with different tricks, how do I buy that?
