So, with all the monster books, many of which are not OGL, there are a lot of 3.5 monsters available to DMs which were never updated to PF. It is relatively straightforwards to convert them--the main issues being altered feats, and possibly lowering the challenge rating to account for PF monsters generally having more hit-points. However, the details of such updates will vary from table to table. Is there any "official" process for converting 3.5 monsters to PF?

Yes and no, there are rules for creating monsters in the Bestiaries. These can be good guidelines for rebuilding those monsters from scratch.
E.g., for a certain iconic D&D monster start with the appropriate amount of HD of aberration (d8, medium BAB, good will saves)
Copy racial ability score adjustments
Assign skills and feats as similar as possible and round out the original theme with leftover skills/feats
Calculate CMB/CMD and other secondary statistics
Assign appropriate SLAs or supernatural abilities that correspond to the iconic attacks of the iconic monster, try to stick to universal monster rules as closely as possible but don't be afraid to think out of the box.
Compare the power level to the tables and other creatures of similar CR. Does it match? If not either tweak the abilities or the CR.

So...I was looking through some old pfsrd news and saw this...
in particular:
Do you know how to convert monsters (the real way, not some way you made up yesterday!) from 3.0 or 3.5 D&D to Pathfinder?
So I assumed this meant that either someone from the pfsrd team thought there was an "official" conversion process, or there is a standard conversion process used on the pfsrd which isn't necessarily endorsed by Paizo. Does anyone know what this is referring to?

I mean with a few exceptions (Combat Maneuver Rules) conversion is not really necessary since most abilities function more or less the same way. You can almost use them as they are, just double check their stats against the tables to make sure the CR is appropriate. The game is still mostly backwards compatible.
