In my camp i am Dming for i have 5 players at lvl 5 one of them is an Aasimar oracle with nature domain. He has a horse companion that is now lvl 7 with stuff like dragon style and a celestial template. Is it wrong of me to count him as a player because he does the damage of another player and has more hp/resistances than anyone else in the party.

An animal companion is not counted as part of APL, as it's a class feature of one of the PCs, and it doesn't gain any experience of its own.
That said, this particular animal companion sounds odd.
Why is the horse level 7? If the character is level 5, then the horse should only have the base "horse companion" stats modified by the things it gains because of a 5th-level master (as per the druid's animal companion class feature).
How did it get the celestial template?
How did its INT increase to 3 or higher (which is the only way it could take feats other than those listed under "animal feats" in the druid's animal companion class feature).

Well, the GM still has an explicit ability to expand this list.
GMs might expand this list to include feats from other sources.
I mean, the GM always has the right due to rule 0, but I think the point of making this explicit is that new feats may be published that are appropriate for animals that aren't retroactively added to the animal feats list. Not that this is relevant to this specific case.

Ahh, celestial servant. Ok.
Huntmaster is a human feat (and 3rd party), an Aasimar shouldn't be able to take it (AFAIK). It would still only make the horse 6 HD (not 7th level).

A Medium oracle can select a camel or a horse. A Small oracle can select a pony or wolf, but can also select a boar or a dog if she is at least 4th level. This mount functions as a druid's animal companion, using your oracle level as your effective druid level. Bonded mounts have an Intelligence score of at least 6.

Outstanding issues are why he is 'level 7' and why the Aasimar oracle was allowed to take a human racial trait.
But really, either way this goes the animal companion is an extension of the character and should not modify APL.

I can't comment about the trait, but an aasimar with oracle as a favored class can increase the effective level of one revelation.
Favored Class Options
The following options are available to all aasimars who have the listed favored class, and unless otherwise stated, the bonus applies each time you select the favored class reward.
Bard: Choose one bardic performance; treat the bard as +1/2 level higher when determining the effects of that performance.
Cavalier: Add +1/4 to the cavalier's bonus on damage against targets of his challenge.
Cleric: Add +1/2 to damage when using positive energy against undead or using Alignment Channel to damage evil outsiders.
Inquisitor: Add +1/2 on Intimidate, Knowledge, and Sense Motive checks made against outsiders.
Oracle: Add +1/2 to the oracle's level for the purpose of determining the effects of one revelation.
Paladin: Add +1/6 to the morale bonus on saving throws provided by the paladin's auras.
Sorcerer: Add +1/4 to the sorcerer's caster level when casting spells with the good descriptor.
Summoner: Add DR 1/evil to the summoner's eidolon. Each additional time the summoner selects this benefit, the DR/evil increases by +1/2 (maximum DR 10/evil).

Okay, with the Huntmaster trait, the Celestial Servant feat, and the aasimar oracle favored class option, this looks fine.
Except for one thing: Base attack should be +4 rather than +7. The mount doesn't use the magical beast BAB/Save progression; it still uses the druid table.
Edit: Also, it shouldn't have 7d10 HD. It only gains 6 HD from the druid table, and those are still animal d8 HD despite the template. So its HD would be 6d8.
Essentially, apart from counting as a magical beast for spells and effects, it doesn't gain anything else for being a magical beast (it works like a paladin's mount in that respect).

I'm 95% certain that the intention is for Celestial Servant to work like the paladin's mount (which gains the celestial template and counts as a magical beast at level 11); that is, it only counts as a magical beast for purposes of spells/effects.
I seriously doubt that the feat is intended to give animal companions full BAB and d10 HD on top of the celestial template.
Even if that is the intention, it should still only have 6 HD rather than 7, as a 7th-level druid's animal companion gets 6 HD.
