The main thing is to have something that is searchable and easy to add NPCs too. Any recommendation on somethin like that?

Have you looked at the Archives of Nethys? The link is to the Monsters/NPC's, but there are also a heck of a lot more tools that he created.

My site uses SQL, which is a pretty nice database tool. I am planning to add all the NPCs from the Codex and GMG as well, soon enough.
