If I create either a mindless contruct or an intelligent contruct, do they always have to roll their own initiative check each time we have an encounter with an enemy? or do they use my own initiative check instead like for example familiars, pets and companions? why wouldn't a construct use its master's initiative check for battles?
Are there any rules about this on the books?

The master will act first most of the times due to the low initiative check that pets, familiars, companions, constructs have so if for example what would happend if a cavalier rolls 20 on his initiative check, his pet rolls a 7 and the enemy rolls a 14 ?
If everyone does it with their pets for streamline combat then why can't I do it for my contruct creation ?

Everyone doing it with their pets is a houserule. You would need to ask your GM if you can do the same.
By the rules, though, everything has its own initiative score. Including animal companions and familiars.

Mounts actually do work differently then animal companions and familiars.
Mounts in Combat: Horses, ponies, and riding dogs can serve readily as combat steeds. Mounts that do not possess combat training (see the Handle Animal skill) are frightened by combat. If you don't dismount, you must make a DC 20 Ride check each round as a move action to control such a mount. If you succeed, you can perform a standard action after the move action. If you fail, the move action becomes a full-round action, and you can't do anything else until your next turn.
Your mount acts on your initiative count as you direct it. You move at its speed, but the mount uses its action to move.
