From the rules on casting spells:
"When you begin a spell that takes 1 round or longer to cast, you must continue the concentration from the current round to just before your turn in the next round (at least). If you lose concentration before the casting is complete, you lose the spell."
Exactly what does "you must continue the concentration" mean in this context? Can a spell caster who is continuing the concentration take other actions such as attacks of opportunity?

It means if anything happens that might break your concentration as per the Magic chapter - notably, if you take damage or are affected by a spell - you must make a concentration check or lose the spell.

An attack of opportunity is not an action. Otherwise, an interesting question. I think RAW would allow it.

Concentration: "To cast a spell, you must concentrate. If something interrupts your concentration while you're casting, you must make a concentration check or lose the spell."

Cast a Spell: "While casting a spell, you don't threaten any squares around you."
Other actions are not prohibited, as long as you can perform that action type. (IE: free, swift, immediate)
Your GM may rule that those actions are distracting, and thus prompt a concentration check.
