I believe I know the answer, but want to double check.
Immunity to all mind-affecting effects (charms, compulsions, morale effects, patterns, and phantasms).
School illusion (glamer);
One of my players thinks invisibility does not work against undead because they wouldn’t have made the spell hide from undead. I think that since it doesn’t say any of the things listed in the immunity line it should work just fine.

Short answer: no.
Long answer: Invisibility, although being placed in the illusion school, is in the glamer subschool (which Undead are not noted to be immune to). Note that Invisibility is not flagged as being 'mind-affecting'. If it were, it'd be useless against undead.
The spell Hide from Undead is a highly specialized spell. Note that it has a longer duration, plus it wards several creatures... at a lower level then Invisibility. There is zero reason to deduce from its existence that Invisibility won't do the trick.
However, note that some Undead have Lifesense listed in their stat block. Any form of invisibility is going to be pretty worthless against these...

Undead do not automatically see invisible creatures. You can tell your player that Hide from Undead is level 1 while Invisibility is level 2.
Additionally, Hide from Undead is primarily a Divine spellcaster's spell. Divine spellcasters are not known for possessing the spell invisibility. This gives them a way to make undead ignore them.
Note: SOME illusions are ALSO mind affecting. But, not all illusions are.
Take the spell Blur. It is an illusion (glamer). Compare it to Color Spray which is a illusion (pattern) [mind-affecting].
Undead are not immune to Blur. They ARE immune to Color Spray. The key element is the [mind-affecting] tag.

it says nothing about immune to glamers. though alot of undead have ways around invisibility, a sneaky character (read: quiet!! invis does nothing for sound...) can manage to avoid them.
Hide from undead, is there as a lower level spell because it is so restricted (like hide from animals)
bottom line: invis makes it so you can not be detected with normal or darkvision, but does not stop true-seeing, blindsense, tremorsense, or any thing similar. Does not prevent them finding you by noise, or footprints.
