The stat blocks marked out are giving you basically markers for what you should look like at that point. For the in-between age categories, you just add in the information from the Dragon Age Categories, Dragon Ability Scores, Dragon Attacks and Speeds, and the Special abilities tables.
So to get from a Young White Dragon to a Young adult White Dragon, you'd take the Young dragon and add in Fog Cloud, Gust of Wind, Spell Resistance, and DR 5/magic from the special abilities table; increase him one size category, give him 4 more hit die, increase his natural armor by 6, and increase his breath cone to 10d4 based on the Dragon age Categories table; increase his STR by 4, decrease his DEX by 2, increase his CON by 2, and increase INT, WIS, and CHA by 2 according to the Dragon Ability Scores Table; then update his attacks as appropriate to his new size based on the Dragon Attacks and Speeds table.
