My Cavalier just hit level 7, so my wolf mount should become large. I don't want that. I'm a halfling and want a medium sized mount. Now, I know I can change to a riding dog, which I believe should stay medium in size. However, I was wondering if there were other options for mounts. I looked in the resource guide and there is no mention that you can't just buy a different mount. I looked at the class feature and it says what you can start with, but says that any animal of appropriate size and with the strength to carry a rider can be used as a mount. So, are there any restrictions in PFS for just buying a creature as a mount?
For PFS, you are limited to what ever is available to a Cavalier through legal sources. If you have the Beast Rider archetype, that opens up your options. Otherwise you're stuck with the Boar/Dog/Pony/Wolf.

Instead of taking the listed benefit at 4th or 7th level, you can instead choose to increase the companion's Dexterity and Constitution by 2.

I was going to point this out as well, your AC doesn't actually have to increase to Large size. You can just take the stat bump to DEX and CON and keep your current mount exactly the same size he is now.

Oh, yes. I meant to mention that. It's definitely a sub-optimal choice compared to what you get with the size change, but it will keep your mount Medium.
GMs have the option of allowing additional mounts. Here's how PFS handles it:

As a paladin, your divine bond mount must be at least one size category larger than you starting at 1st level. If you’re a Medium PC, your mount must be Large. If you’re a Small PC, your mount must be at least Medium. You may only select a mount from the listed mounts on page 63 of the Pathfinder RPG Core Rulebook unless another source grants access to additional creature choices. As a cavalier, you may select a mount from those listed on page 33 of the Advanced Player's Guide. No additional mounts are legal in Pathfinder Society Organized Play except when granted from another legal source.

By that, the feature lists examples that you can start with, but doesn't say that you can't buy or have other mounts. There is also nothing in the PFS sanction guides that states that you can't buy another animal suitable as a mount to replace the one you start with.
