Allo there,
I know that hexes such as Charm and Evil Eye are mind-affecting, so creatures immune to mind-affects such as the Undead and Constructs are unaffected, but even so I was curious about just what is immune to a witch's hexes: undead, constructs, swarms, elementals, swarms?
Would a hex still affect something incorporeal? What about something with spell resistance, spell immunity, et cetera?
Is a hex considered magic, but not a spell?
And while I know that many creatures that are immune to mind-affects are also immune to sleep affects, I do wonder if a hex like Misfortune is something else entirely as it is not specified as mind-affecting (I am almost thinking of it as more of a curse/luck thing). Thank you in advance.

Hexes are supernatural abilities. They do not provoke attacks of opportunity, require concentration checks, nor does spell resistance (nor spell immunity) ever apply. They do not function in an anti-magic field.
However, as most of the offensive ones are mind-affecting only a handful work on creatures immune to mind-affecting abilities. These include, to my knowledge, the Misfortune, Retribution and possibly Blight or Healing hexes. Unless a witch has some means of rendering her hexes "non-corporeal", offensive hexes have only 50% chance of affecting an incorporeal opponent as per the rules regarding incorporeality.

Hexes aren't mind affecting unless they specifically say they are. So some hexes would work on undead, constructs and elementals. All hexes are extraordinary (EX) or supernatural (SU), not spells, so they are not subject to spell resistance or immunity. As for incorporeal, if you can see it, you can hex it (assuming it's not immune of course).
