A good part of the land animals availiable as AC get scent but no birds, not even the vulture.

Almost all animals in Pathfinder have fairly serious flaws in how they're depicted mechanically. The rules just don't really handle the massive range of abilities that animals have in real life. In order to do so would require far more page space and effort than would be warranted.
Either house rule particular features that bother you (eg, vultures smelling dead things, eagles able to see things miles away, etc) or live with it. In a home game I prefer the first where animals get at least a little bit of reality modifications. But its a lot of work and requires a lot of knowledge.

My problem is that I would like to build a falconer ranger while having an AC that can benefit from pheromone arrows.
