The straight forward pit trap found here:

Is CR 1 because, I believe, the average damage for a 20' fall is 7, which rounds to 10 (nearest 10).
I assume, therefore, that the maximum depth for a similar CR 2 trap is 70', since the average damage then would be 24.5 which rounds to 20 (nearest 10).
Am I right?

Actually the pit trap is 'multiple opponents', which doubles the average damage for calculating the CR.
As such the normal Pit Trap has 14 average damage, which is rounded down to CR +1.For a CR +2 equivalent you can increase the fall to 30' for an average damage of 10½, which counts as 21 for multiple targets.
A fall of 40' would be 14 average damage, or 28 with multiple targets, which becomes a CR 3.

I am not that strong in the trap creation rules, but that sounds reasonable.
But I think you should take care using a 70' deep pit, as it can get very difficult for low levels characters to get out off.

Eh if it is only 5' wide then you get advantages for using corners and being able to reach both sides of the pit...it actually wouldn't be TERRIBLE, but I wouldn't recommend having your Cleric or Wizard falling in. =b

Yes. On the other hand, the save DC for not falling in might be going down a notch.
One question: What are you trying to pull off? Create a max-damage save or splat effect, and cram it into the lowest possible CR?
If so, don't.

Using corners? Definatly.
Bracing against walls? Not so sure... The specific example in the climb skill is a chimney. A chimney is far from a 5 ft broad.
