The 'Fast Mount or Dismount' action from the ride skill specifies that it cannot be used with a mount more than one size larger than you. As such, riding in generel can be done with the larger mount.
While it isn't proporly defined, I would rule that mount more than one size category larger than you, count as ill suited, thus granting -5 on ride checks.

Hmm... question is, am I still able to attack from a mount much larger than myself? (using an extreme example: picturing a halfling fighter riding the Tarrasque and still merrily delivering a bunch of Kukri attacks appears a tad... odd to me)

Depends on where on the Tarrasque he is riding.

In dnd, ponies cannot be used by medium creatures (they are meant for halfling cavalry). I have always laughed at that. The mongols rode ponies, as did other horse archer peoples. My wife rode a pony months ago. She isn't a gigantic medium, being just over 5 feet and light, but is a medium by the rules and the pony was not troubled by her weight.
Scrap the rule, the makers didn't know much about riding.
