I'm contemplating whether or not to order the Jade Regent adventure paths. We're playing KM right now and loving it as well. My only hesitation with asian inspired fantasy themes is that usually asian = japanese, and japanese only. The authors might make mention of chinese/korean/se asian inspired areas, but in general everything that you encounter is based on japan.
Before paying money for the Jade Regent APs, I'd like to know if this rule of thumb applies as well.

Pretty much, yes. There are only three "Asian" adventures in the AP, mostly set in Minkai (pseudo-Japan). You pass through pseudo-Mongolia to get there, but that is a fairly brief (if awesome) interlude. The rest is a bunch of Ninjas, Samurai, and Kami, with aspects from other areas mixed in. You could probably reflavor it yourself, though I don't know enough about Asian fantasy to be able to say if there will be easy analogues for everything.

are there any modules or adventures written in non-japanese areas?
Several of Season 3's Pathfinder Society Scenarios are set in other regions of Tian Xia, such as the Quest for Perfection trilogy.

Amusingly, the most Japanese books of Jade Regent are the most vanilla in terms of plot and task for the PCs
It doesn't mean they're not good, though. They're extremely Japanese.
I quietly pray for groups that aren't used to character names more common than Bob, George, Jerry and Sam. I know my group boggled at some of the names that weren't even that out there.
