I just want to make sure I am correct in my lines of thought.
Thought / Assumption #1 - One has to attack or full-attack in order to fight defensively each round.
Thought / Assumption #2 - (This one I am not entirely sure on) The plus to my AC lasts until the beginning of my next turn.
Side Question: This one wasn't in the title. My DM is allowing me to use the Cestus with my Monk's increasing unarmed damage in place of the Cestus damage. My question is, while you are wearing what is essentially "battle gloves", does that mean that you don't have a hand free in order to use the Crane Wing when wearing the Cestus?
Any information would be greatly appreciated.

Yes, you have to make an attack roll in order to fight defensively. You can instead take the Total Defense action, which is a standard action and provides a +4 dodge bonus for 1 round.

Yep. That's typically how a 1 round duration will work out.
Fun fact: I see this missed a lot, but if you invest 3 ranks in Acrobatics you gain a +3 to AC when fighting defensively and a +6 to AC when taking total defense. Mixed with Crane Style it essentially becomes a +4 to AC when fighting defensively for only a -2 to attack. That's half the penalty of Combat Expertise.
I can't really help with the rest, I'm afraid.

Take the Aldori sword dueling archetype and you get the penalty for fighting defensively to 0 with crane style.

Thanks for the info everyone.
He told me that he wanted me to use 2 Cestus actually, so I guess it is either in increase to hit and crit or the use of Crane Wing, which makes it a difficult decision unless he rules that since they are basically battle gloves that I can still use it or just use one Cestus. I guess I shall see.
I am indeed going the master of many styles route so flurry is sadly not a problem.
Also, I will most definitely be upping my Acrobatics so the plus will be helpful.

Just another additional fun note - Duelist increases fighting defensively so you can add an additional + 3 AC when fighting defensively at max level duelist, and since you typically always have one hand free it goes nicely with the Crane Style.
Attack! *Crane style block, attack of opportunity*
Damnit, Attack again *Parry, riposte, attack of opportunity*
*Aww, you can't hit me because your highest BAB attacks were used and I am fighting defensively? What a shame :)*

"When using a cestus, your fingers are mostly exposed, allowing you to wield or carry items in that hand, but the constriction of the weapon at your knuckles gives you a –2 penalty on all precision-based tasks involving that hand (such as opening locks)."
Since you can wield or carry items in the hand, It counts as free.
