Does "Inflict Light Wounds" if cast adjacent to an enemy, provoke an AOO? Or is it considered an armed melee attack?
Casting a spell always provokes, unless you're casting defensively or the spell says otherwise.
Inflict light wounds, once cast, will let you make a melee touch attack (as a free action the round you cast it, or as a standard action in subsequent rounds if you hold the charge). This attack is considered armed and does not provoke.
Casting the spell and poking someone's eye are two different things. The first provokes, the second doesn't.

Needs you to start 10ft away from the enemy I know, so not always possible.
Actually, per the Core Rules on touch spells, holding the charge, etc; you can cast as a standard action, hold the charge, take a move action to walk right up to the intended target, then make your touch attack as a free action, all in one turn.

Your idea is correct, your terminology isn't.
You can cast the spell, take a 5' step (or a full move action) then deliver the spell as a free action.
You're not technically holding the charge until the end of the round (if the spell is not yet discharged).

As said it is the act of casting a spell that provoke an AoO.
Any touch range spell used on a enemy count as a armed attack, even if it is not harmful or even beneficial. If for some weird reason you want to cast invisibility on a enemy your touch count as a armed attack as long as you use it only to deliver the spell.

Possibly. You can 5 ft step in the middle of a full attack or other action, so I could see that being legal. Definitely a very specific circumstance. You have to start out exactly 5 ft out of reach of the foe and have the same reach as him for that tactic to do anything.
Not possibly. Most definitely you can cast, then take a single move action (30' for an unencumbered unarmored human) then deliver the touch attack.
