I wanted a rule clarification for PFS. If I am a Paladin, can I choose to get the Companion Figurine feat later on, like for my 9th level feat or do I have to take it right when I get my Divine Bond ability?
For instance, If I get my Mount at level 5, can I choose the Horse but then at level 9, dismiss it and take this feat and choose Gold Lion?

The Golden Lion won't serve as a mount, so that particular choice is a no.
You also have to own the figurine in question in order to take the feat. so that means it would have to be on the allowed purchase list. depending on your Fame score.
Why won't The Golden Lion serve as a Mount? I don't understand your logic. It is a large creature...
I am pretty sure by 8th level I will be able to buy a a 16500 from my fame, so it doesn't matter if its on my purchase list.

It's not a horse type figurine. The Stone Horse or the Ebony Fly would serve but the latter requires another feat.
I also as far as I can tell don't see that anything circumvents the usage limits of the figurine itself, as in only being availble for a limited amount of time.
