I'm building a very powerful Unfettered Eidolon that is a high-level Wizard's unwilling enforcer. The Wizard vanquished a Summoner rival and then used the True Name arcane discovery to 'steal' the Eidolon for his own use.
Now I'm left to build it. I'm curious if the usual Eidolon restrictions on maximum attacks apply to an Unfettered Eidolon. Likewise, is it limited to only the evolutions shown or can in purchase others including the ones from Ultimate Magic)?

put as many tentacles on that puppy as will fit, then throw on improved natural attack (tentacle) the feat, pounce, grab, improved damage, large and as many natural armour upgrades as you have feats/EPs for. (Guess who's going all lovecraftian with Eidolons this year!)
EDIT: not optimum, but lets face it a tentacled monstrocity like this will be something your players remember. also, the visuals you could use while discribing this thing are fun!

The Summoner controls the aspect of the eidolon ... if the summoner is out of the equation, and his eidolon is still in existence... then its physical form would remain as it was when last formed by the summoner.
I'd say it gets nothing new, evolution-wise. Nor would it increase its limit on attacks or the like (those are all aspects of its HD)
Although the wizard managed to steal control of it, he would not have the training to reform it, as he's not a summoner. Nor would he get any of the summoner abilities related to his eidolon (like transposition, life link, et al)
Though it might perhaps be able to gain class levels from that point on if it sticks around, counting as a native outsider, perhaps.

That goes back to my question: can an unfettered eidolon spend its EP on evolutions from the full list or just from the short list given in Bestiary 3? Pounce, for example, does not appear in the list for unfettered eidolon.

I guess if you were meant to be able to choose from any off the normal list they wouldn't have bothered to re-write all the ones in the bestiary entry...
Perhaps, but it could also be that they did it so you don't have to own the APG to make use of the unfettered eidolon.
The interpretation that the unfettered eidolon is entirely seperate from the APG would imply that there is no limit on the number of natural attacks the unfettered eidolon can have (since it's not listed in Bestiary 3) but I think that might be a bad idea.

Just to follow up the last post, there's not anything I can find - in Bestiary 3, at least - that would stop me from putting three extra sets of arms on a humanoid unfettered eidolon and throwing on four extra sets of claws (the default ones can go on the legs). For the cost of only 10EP the thing can have 10 claw attacks. Yikes!
