how tall are walls? like wall of force for instance?

it reads "wall whose area is up to one 10-ft. square/level" but it never says the height. and if it's 10ft squares that you stack vertically, how thick is it? how many spaces does it take up? or does it just go BETWEEN spaces?

It's a flat, vertical plane whose area is up to one 10-foot square per level.

So at CL 10, you could have 10' high, 100' wide, or 50' high, 20' wide, etc.

On a battle map, it's just lines. It doesn't fill a square, it's between them like you said.

can you make a cube with it?

or even just a square without a top?

You mean with only one casting ? No. Walls usually must be a line (Wall of Ice allows 2 shapes : a line or an hemisphere).

It depends on the spell : Wall of Force must be vertical, so you can't make a cube with it (as you can't make a roof of force). Other wall spells don't have this limitation, so you could use several castings to make a cube.

Of course, your DM may tell you that the roof could be too heavy and collapse.

(S) Shapeable: "If an area or effect entry ends with "(S)," you can shape the spell. A shaped effect or area can have no dimension smaller than 10 feet. Many effects or areas are given as cubes to make it easy to model irregular shapes. Three-dimensional volumes are most often needed to define aerial or underwater effects and areas."

Wall of Force: Effect wall whose area is up to one 10-ft. square/level

Wall of Fire: Effect opaque sheet of flame up to 20 ft. long/level or a ring of fire with a radius of up to 5 ft./two levels; either form 20 ft. high

Wall of Ice: Effect anchored plane of ice, up to one 10-ft. square/level, or hemisphere of ice with a radius of up to 3 ft. + 1 ft./level

Wall of Iron: Effect iron wall whose area is up to one 5-ft. square/level; see text

Wall of Stone: Effect stone wall whose area is up to one 5-ft. square/level (S)

Wall of Thorns: Effect wall of thorny brush, up to one 10-ft. cube/level (S)

Nope. A wall of force has to be completely straight.
