They don't go away. They are permanent until you get a restoration spell cast on you.
So if you had 1 permanent Negative Level before you died that one would stack with the two you get when rezzed?
What if the Negative Level you had before was temporary?
Depends on the source of the temporary negative levels. Some magic items grant them, and they would obviously disappear once you got rid of the item. Some creatures give negative levels that become permanent if you fail your save the next day. If the character died before he got a chance to make the save, I'd say the negative level goes away, and so would any that allowed a save every day.
