Question, if a player and an NPC are grappeling (but no one is pinned) and another player/NPC trys to attack one of them, is there a cover check involved, or any chance of hitting the other person?
I know that once a person is pinned they lose dex and take a -4 to AC, but untill that happens are they still rolling around and providing each other with cover?
Also, while grappeling, is it possible for one of the characters to still attack with their normal weapon (longsword/mace/staff) I couldnt find anything that said they couldnt use normal weapons or only light weapons.

In Pathfinder, grappling characters aren't rolling around in the same square. They're standing there with one arm on each other. Although the Grappled condition gives each of them a -4 to Dex and a -2 to attack rolls and prevents them from moving, they can generally take actions that only require one hand -- including attacking with a mace or longsword (at -2).
Since they're in different squares, melee attacks against one or the other by a third party resolve as normal (and remember that they're at -2 to AC from the Grappled condition Dex penalty).

Sounds good to me is there any RAW to support this other than the fact that you are in different squares?
One of my PC's will prolly die if its true!
