Cavalier could probably work, too. Maybe the spell-less Paladin variant.
The artificer class might make up for primary spell casting. Possibly include the Witch Hunter, too, with some minor changes to it if you're not including spellcasters. Make it a Thiefcatcher or cannibal hunter.
I think it really depends a lot on what kind of post apocalyptic world you're talking about. Zombie apocalypse? Nuclear holocaust? Some event that eliminates all functioning tech more complicated than a waterwheel but brings magic to the world? Alien invasion? Vampires?
In some of those cases, magic is ok. In others, technology could account for the magical/supernatural abilities of some classes. In some, you're better off with a no-magic world.

If you're going for a magic-less Pathfinder Core setting then any of the non-spellcasting classes should work, even the Monk. But you shouldn't forget about the psionics classes, very appropriate for a post-apocalyptic setting.
If you do decide to use magic then you should likely stick to just the spontaneous casting classes. For the most part IMHO the Sorcerer would be the easiest to fit in, as might the Oracle and Witch. The Cleric, Druid, Paladin, and Wizard are probably going to require a lot of justification to fit into a P.A. setting, unless you're going for a Thundarr/Gamma World feel.
The big problems might be the Ranger and Bard, both have casting abilities that would be a odd fit in a no magic setting.

Theres a big difference between Low Magic, No Magic, and Lost Magic. Whichever one you pick determines a lot about class structure.
I'm a big fan of Lost Magic, myself. Its out there, its just VERY hard to find/understand/use. I'd make "Spellcaster" a prestige class, with a progression from 1-6th level spells, and maybe an epic 5 level expansion for 7-9th.
But thats just me.

Fighter, Rogue, Monk, Cavalier, Barbarian yes.
Sorcerer, Oracle, Alchemist, Ranger (spell-less), Inquisitor (spell less?) probably yes.
Wizard, Witch, Cleric, Druid, Paladin, Summoner would be "discovered classes, lost to time" or regional specific "Prestige Classes" for the PC's.
An easier question to ask is "what do I want from this game?"
Once you have that nailed down, exact classes / rules will follow much easier.

So planning on running a Apocalypse game, earth, higher tech but not to much, probably no magic but have not decided, Any way what classes do you think fit.
Fighter, Ranger, Rogue, Are a for sure, the rest may take some work.
Anyway what do you guys think
My suggestion would be to use D20 Modern. There's an SRD for it I believe.
