IMO, altough it is not clear in the RAW, you deliver touch attacks with one of your hands only, so if someone hits you it won't discharge.

if it goes off that easy, it goes off from air hitting you, or dust, or falling leaves, a pesky fly, ect. You'd have to ready an action to do that. also same reason the spell doesnt go off if you make an UAS with it and miss because of their shield bonus.

now you can make the touch during a grapple if the spell is in your hand.

this may just be possible. or at least thats how i've always interpreted it

To me, there's a difference between 'If you touch anything or anyone while holding a charge, even unintentionally, the spell discharges' and being touched by someone/something. The first is initiated by you, the latter is not. So I'd say being hit/touched/stabbed/slashed/grappled/fondled/etc. shouldn't discharged your touch spell; you didn't touch the offending object/person/weapon, it touched you. Therefore, your touch spell should still be ready and waiting for you to use it.

I have always read that is if you touch anything that is a valid target, the spell goes off.

If a touch spell can only target living creatures, then you could slap a zombie all day long while holding a the charge and it wouldn't go off.

Normally, you cannot take an action in the middle of another action, this is a clearly listed exception to that rule.
