Are sorcerer cantrips at-will spells, Can anyone help?

Ah, but Nethys wrote true. The Adept's 0-level spells are referred to neither as cantrips nor orisons.

By "at-will" does that mean they do not require V-S-M components, or a casting time? Or do you just cast them as a regular spell, but don't "lose" it after casting?

The second one. They take a standard action, like most spells, and have V and/or S components. You can cast any you have prepared as much as you like. I'm not aware of any 0 spells that require M components.
