It is definitely not role playing but the new FPS, Left 4 Dead, has the best co-op playing I have ever seen.
You assume characters in a 'movie' and try and escape a zombie holocaust. If you get tired of that you can play a zombie against a real human opponent.
The game is really well done and the replay factor is limitless due to the human vs. human aspect.

I've had fun playing Marvel Ultimate Alliance in co-op; you level up and choose which powers & attributes you want to focus on.
I just wanted to second this one. My nephew brought his 360 to Thanksgiving this year and we had this game going nearly the whole time. The ability of the second, third and fourth players to drop in and out in real time actually made it so I could sit down and play for a awhile without being tied to the game. You can choose to have the exp reward selected automatically by the computer, or manually.

I definitely think it's a decent "hack 'n' slash" game (like Baldur's Gate: Dark Alliance) suitable for a casual player. Even my wife was willing to play it with me! (If you knew my wife, that'd mean something.)
