Hey everyone. I'm still trying to create a new campaign and I'm trying to get some monsters into it. I have a couple of books containing monsters. Some of the monsters in these books have been converted into the 3.5 version through Monster Manual (MM), MMII, and MMIII.
What my question is, since some of the monsters that I want to use haven't been converted yet, does anyone know how to convert from v2.0 into v3.5 or where to find that information

A ton of creature from the original Monster Manual, Monster Manual II, and Fiend Folio were converted over to 3.5 by Necromancer Games in the original Tome of Horrors. Some of the creatures therein were subsequently made over in the 3.5 Fiend Folio and Monster Manual III, but there were still several classics that haven't been touched and are worth a look in that particular source. (BTW . . . why has it taken so long for WOTC to update quicklings? WHY? Well, at least I have my stats in the Tome of Horrors . . . )

Tome of Horrors is an excellent resource for a DM who wants to take some older monsters and bring them into a 3.5 game.
You can also check out the Creature Catalog. I haven't looked at the site in a long time, but the last time I did it was really awesome.

In the cases that I've had to do any conversions (AD&D -> 3.0 -> 3.5) I've used the "compare and contrast" method. I'll find a monster with similar abilities that had been updated, then try to do the same.
Since their is no "official" update for the monster in question, anything you come up with will probably be suitable for use in your game. You could stay as true to the original as you wish, or you can make something subtly different.

You might consider picking up the Tome of Horrors (I believe it's a Necromancer Games product)... it converts most 1st edition monsters to 3rd edition. While there are a few minor differences in 1st ed and 2nd ed versions of creatures, they are minor compared to the jump to 3e.

My rather unorthodox solution is that I put modified Bakemono (from Oriental Adventures) into every encounter where I need a monster from 2nd ed that I don't have stats for in 3.5.
In my campaign Bakemono are everywhere...
Jeremy needs Xvarts...Bakemono are Xvarts!
Jeremy needs Knorker...Bakemono with more HD are Knorkers!
Jeremy needs Quicklings...Bakemono on double doses of Haste are Quicklings!
Coming to future adventures...undead Bakemono and Bakemono with gills...
Also projected...Bakemono are usually really dumb but if they are niot born stupid then they invariably have a natural talent for druidic magic (NE druidic magic) and psionics - hence lots of Psionic and Druid Bakemono for higher levels.
Actually its worked out pretty well - my players are perpetually freaked out every time they see Bakemono - they have no idea how tough these particuler Bakemono are or whether they are going to have strange powers. All the Bakemono look as similer as possible depending on their abilities so the players never know until the shooting starts.

Why hasn't anyone officially converted the Aurumvorax? I remember years ago DM'ing and one of those little b#~~*!s tore the party to shreds. Should've seen the looks on their faces when an 8 legged badger sent them running to the hills!
That's the six-armed beaver/wolverine thing, right? IIRC, you can find it converted to 3.0 in Monsters of Faerun. I know it's been converted in some official product because I created an encounter based around it.
