No real due date. When I get 5-6 players with mostly complete characters we'll begin to integrate them into a group and get started with the campaign soon after that. Don't won't to wait too long as some who are quicker on the draw might lose interest.
A couple of notes about how I run things in PbP for Pathfinder 2e...
1. Since Surprise rounds are almost unheard of in PF2e you will not be allowed to have your weapon out before combat for free. I've lost multiple players over this, but I enforce it because none of the adversaries have their weapons out either, and I don't want to change all their actions before combat. I've loosened up a bit on taking potions etc before entering an encounter... but the no weapons ready is set in stone. If you want to have a weapon out without spending an action, take "Quick Draw".
Solely in case you aren't familiar and for the sake of clarity, Solarian has a handy class feature that allows them to manifest their weapons upon rolling initiative.

Kalo Solarian Electrician (terraformer background from the PG) who could fill the Gunner role and, depending on final training allocation, a middling Pilot or a basic medic.
An alternative idea is an Astrazoan Operative, probably a CHA path or possibly an INT path.
Build questions:
1. Do we still need to take Tooth and Claw now that one of the ikons is a manufactured weapon?
2. Since low-light vision and dark vision are granted, are we required to spend the feats to gain the other imprecise senses?
Campaign question:
We're just starting at a higher level, not skipping content to start at the 4th level milestone, right?
Trident does not function with swashbuckler, which requires agile or finesse weapons. I had previously dismissed Rogue (avenger) since ikons were going to be in the unarmed attacks, but now one of them is the deity's favor weapon. So this is better.
With the assignment of weapons, I'm proposing to switch Swashbuckler to Rogue and the free archetype to Avenger (rogue class archetype) so that I can use my trident.
Also considered changing bobcat to walrus and Swashbuckler to Champion, but I prefer the first adjustment.
I’m gathering that your vision is for the characters to be literal awakened animals (I.e., no equipment/clothes, no bow-wielding stag, no rapier-wielding bird)?
I could make something fun with any of them, but I'm leaning toward Gozreh or Erastil. My least interest is with Abadar. I've never really felt compelled by that particular deity in the lore.
Also, if nobody else is interested in the playtest classes, I could volunteer to try Commander, but want to defer to others who might be dying to try one of them specifically.
I've got a Fighter, Gunslinger, or Swashbuckler I could bring for low tier. I've got a Cleric for high tier, and my Fighter would probably be OK in low-ish high tier (he somehow always ends up in a tier up).
I've also got an assortment of non-martial level 1s and 2s.
