Gear can certainly be changed between battles. I imagine that the news of a flying pit fighter would spread rather quickly. I had planned to set the next round of random fights up when a certain number of pits were free, but challenges are now using the same pits. At this point the plan is that randomization will occur when there are eight combatants in the pool.
More challenges may certainly happen at this point, however.

isnt the rule that you can only be in one challenge match, and then have to go back to the random matches before you can do another challenge? or did i read that wrong?

If you're able, I'd appreciate a new copy of your stat block with gear changes made (I have each combatant saved offline, so I can simply overwrite them to stay updated).
Challenges may only occur between rated matches. This is so a pit fighter must beat all sorts of people to progress, not just those he wants to fight. Also, if everyone could challenge more than once between randomizations, it might take a while to have eight people free at once.
This means Vironus will need to wait until the next round of battles, though it seems our latecomers are showing up so that may not take too long. Anyone who has only participated in random battles so far and is now done may challenge anyone else, however. Remember that you have no obligation to accept a challenge (unless you're honorable or some nonsense!).

Looking through some rules, a Light Ballista only takes a crew of 1...
The mounting on a camel bit might be tricky, but I shall investigate.
You could buy a cart for you camel and mount the ballista on the cart. The description for the light ballista says it can be mounted on vehicles.
A cart only costs 15 gp +barding for your camel.
Could a monkey familiar do the work? Cause having a little monkey in a hat and a red vest manning the ballista is just awesome.
Nope it has to be a medium creature.Two small creatures count as one medium creature for this purpose.
Pretty sure diminuitive creatures are out.

I'm rolling a Seige Mage tonight and will have him submitted ASAP!! :D
I'm also buying a cart for Esmeralda. I said he would buy the biggest crossbow he could find! XD
However, this may take a couple levels to come together as he needs a few feats to make it all work like Seige Master and Eldritch Heritage. But rest assured, you now know Bruno's advancement track!

Base stats for YEEEHAAA! A Ballista! (working name) have been mostly laid out. Just need to figure out the specifics of this ballista thing and I'll be ready for the Audience's amusement! :)
I decided to go for a differnt character entirely, so bruno is free to accept that challenge from a ways back or get thrown into a randomized fight, whichever comes first.
Well as long as we don't get randomized right away, I have a little goblin waiting to face a challenger as soon as his last match is officially called.
Waiting on official confirmation, but Elinora just became 2-0. On a completely unrelated note, I am very eager to see the ballista in action. :P
Shigeharu and Gnasher just had a marathon battle, at least by arena standards. I think it was 9 rounds. Check it out in pit five.

Well, Kailin and Falcon are currently engaged in a slow battle of whiffs and minor damage through grapples, which seems to be moving towards mutually assured destruction at a relatively casual pace.
