Here's the info on the fighter's, for those scared of peeking into spoilers:
The dwarf is not anyone special, he's obviously a newcomer. However, Belok Talorg is a former member of the Wave Riders, the band that bravely and unsuccesfuly attempted to take on the Kraken. The half-orc is a mighty holy warrior and a feared priest of the God of Strength and Battle, Bowbe. He was once champion of the brawling league at the Skull, but has since lost his title to the mysterious Jin.

Even knowing that my bet is staying as is. Just because the dwarf is a newcomer doesn't mean he'll lose.. lol. If I lose the money I lose, but luck may favor him tonight.

«If I were you, I would be wary of underestimating the newcomers» he says to Salty and Zaria «Master Valaravans, may I ask you for one of your famous disappearance cocktails? I am afraid it might come in handy.» he puts on the table enough money for an invisibility potion, then makes his way to the ring where the combatants face each other.
how crowded is it near the fight? How chaotic? Would the casting of a spell be obvious, or could I conceal it with a bluff check?

That is the potion he carries with him, to make another one will take him 2 hours
If everything goes according to plan, I won't even use it. But better safe than sorry

Rhous gets close to the ring and shout at the half-orc, trying his best to sound like a lowborn and putting aside his fancy words for the moment «C’mon champion, c’mon! I bet on you me last pay!» he shouts to grab his attention, waving the receipt for the bet on Belok.
Then, careful not to be seen by others, casts a charm spell on the half-orc «big fella like you, get’im! Sweep tha leg, trip him down!» Rhous tries to remember what he knows about dwarves and suggests a losing tactic to Belok, knowing the spell will make it seem like a good idea «make’im fall down! C’mon!»
Will DC 16 to resist the charm person spell; I’ll watch the fight and try to give him bad advice appearing just incompetent rather than malicious.
Also, if needed, Bluff: 1d20 + 10 ⇒ (14) + 10 = 24 to blend with the crowd shouting advice and cheering.
Would a ray of enfeeblement be noticed?

Ray of Enfeeblement has some sparkling and flashing. Best avoid that spell.
The half-orc hears the call for advice. Obviously ignoring it, he takes a moment to make a small prayer, obviously angering the dwarf. The dwarf rushes in and attempts to grapple his opponent. His arms quickly wrap around the half-orc and a triumphant smirk takes his face. Belok rolls his eyes and slips out of the grab almost as if made of jelly. He retaliates with a whirlwind of jabs. The dwarf takes the full set of blows.

She then lets out a sigh and goes back to her normal cheery self and continues cheering for the dwarf.

Belok gives a glance over to Salty, granting him a nod. The dwarf again attempts to grab onto Belok, but the half-orc slips through his fingers, as if water flowing from a hand. Belok lets out another assault on the dwarf. The dwarf falls to his knees, throwing his hand up into the air.
"We have a surrender! Ladies and gentleman, your winner in rare form today: Belok Talorg!"
Cheers and whoops spill forth from the crowd. The bookie strolls over and rewards the group with their appropriate winnings.
