I would like for us to brainstorm some of the best forms for the various polymorph spells.
Off of the top of my head, catoblepus wins hands down for the Beast Shape IV spell for its deadly breath weapon, trample, and good natural attack routine.
Giant Jellyfish with Vermin Shape II allows four long range tentacle attacks with some NASTY poison effects. I recommend combining with overland flight for a cool visual.
Monstrous Physique II allows one to use a doppelganger's mimicry ability so your wizard can now use armor, exotic weapons, and divine scrolls, wands, and staffs.
Any others?

For what purpose though? Straight combat, utility, abilities, etc?

not to mention with what class builds ?
forms good for an alchemist STR/INT build could be different to forms good for a sorceror DEX/CHA build

For what purpose?
Doesn't matter. You got a good combat form in mind? State it. Don't forget to mention that it's a good combat form though.
For what character?
Again, merely clarify your brain storm. Say "X form is good as a Y form for Z class."
Otherwise, this thread becomes too limited in scope and doesn't really help anyone.

I just wish Wild Shape had better options. Many of the top forms likely to be listed aren't valid for druids, since they don't progress beyond Beast Shape III and can't take the form of Magical Beasts and the like. I kinda miss how overpowered druids were in 3.x :P Still, every Bestiary that comes out increases the options for all polymorphers. Dinosaurs are a particular favorite of mine. The Allosaurus is a favorite of mine, as it's a Huge creature with 3 attacks, pounce, grab, rake, low-light vision, scent, and a 50 foot speed.

Alter Self:
Boggard for Darkvision, Low-Light Vision, 30'Swim Speed, and ranged touch attack (that can't do anything on its own).
Bugbear for Scent (and Darkvision).
Troglodyte for 3 natural attacks (and Darkvision).
Beast Shape I:
Deinonychus for the 60' speed, Scent, and 4 natural attacks.
Leopard is simiar but slower, but gains a climb speed and loses the "foreclaw" attack.
Eagle for flight.

The two I find useful for Beast Shape IV are Chimera and Gorgon.
Chimera's got a good attack routine + a breath weapon + flight.Gorgon's got a very good breath weapon(petrification) + trample.
