This is in Ultimate Equipment, p. 361. Each of the creature types has a selection of treasure types associated with it — aberrations have A, B, D, E, dragons have A, B, C, H, I, oozes have A, B, D, etc.
Each of the treasure types is affiliated with a table, but I can't work out how to select which treasure type to use for a particular creature. I'm not sure if I'm supposed to use each of those categories, or just a couple, or...what.

I think the treasure types are defined in the appendix for Ultimate Equipment. Here's why I think that:
I don't know how to navigate to it from the current PRD site, but in the retired Legacy PRD site, you can expand "Ultimate Equipment" in the left menu and click on the "Appendix" link at the end of that sub-menu. Step 3 talks about Treasure Type, and if you scroll down a bit, you'll see where they define what treasure is included in each type; and if you scroll down even more, you'll see the tables for each Treasure Type.

Thanks, I can see where each treasure type has its own tables.
What I'm puzzled about is how to decide which of them to use, when each creature type (animal, fey, ooze, etc.) has multiple treasure types listed.
As Blaphers pointed out, these aren't included in the statblocks of monsters in the Bestiaries, so I'm not sure which of the treasure types I'm supposed to use for any given creature. Am I supposed to select just one treasure type? If so, how? The tables themselves are extremely detailed, but I feel like I'm missing some key insight into how to use them.

I think it's supposed to be a mix of all of the types associated with each creature. You determine the overall gp value of the treasure as defined in Step 1, and then you pick lines from the creature's associated treasure types' tables so that the total of the combined lines equal the overall gp value.

That's what I ended up doing, but it felt very slapdash and free-form.
They could've added a couple extra lines of text to clarify that this is what they intended, since as it is the section glosses over this completely.
Very confusing, but at least I'm not the only one who didn't know for sure. Thanks, folks.
