That's up to you. It's fully night-time now and you've explored this whole place. You need to find something to do with Vorkstag and Grine. Convicing the guards to hold them in a cell is probably your best bet. Shouldn't be too hard once you've unmasked them, as it were (Vorkstag's true skinless form and Grine's obviously-not-Gnome features will be enough on its own to overturn their good reputation). And then sleep, and the trial in the morning unless you had another idea?

Changing what they are would be impoissible. The best you can really do is provide them with a decent supply of juice and tell them how to make it, then hopefully they can manage it themselves. They can totes retrain some skill ranks in the coming weeks and manage it assisting themselves, I think. 4 ranks +3 class skill puts them in range of making it reasonably often enough that they can sustain it forever, especially if they nab Skill Focus.

The group leaves Vorkstag and Grine's hideout triumphant.
And they return to find the courthouse yard on fire.
An angry mob has formed outside the courthouse.
"We're tired of waiting!"
"Burn the Beast! Burn the Beast! Burn the Beast!"
"Get that whoreson out here so we can make him pay!"
All of these, and more can be heard from the crowd as they brandish their torches and pitchforks (and some few crossbows), and pass around clay jugs with X's on them.
As you come closer, you notice there are 10 people holding a battering ram trying to bash down the door to the jail.
"If you won't bring him out, we'll come in!"

Z will step forwards, the flames pour from her arms in cascades as her anger flares.
Shouting out to the gathered crowd, "You'll do no such thing! I see you all have started a trifling fire, I suggest you clear out of here before I demostrate to you all the true power of flames!"

Since there seems to be a bit of confusion I'll break this down.
This is only a "combat" insomuch as it oes round by round. The goal here is to disperse the mob. This can be done in several ways.
1.) Kill people (or damage them, at least).
2.) A DC 15 Diplomacy check (opposed by one of the ringleaders. Basically, an opposed check where the minimum DC is 15), which disperses 1d4 commoners.
3.) A DC 20 Intimidate check (also opposed by one of the ringleaders in the same way), which also disperses 1d4 commoners.
So, Zin's "action" for round 1 was her Intimidate check, which passed the base DC but was slapped down by a ringleader. Jones' first "action" was a Diplomacy check, which succeeded on both counts, and dispersed 1 commoner. So you an attack OR Diplomacy OR Intimidate...but not any two of the above.

Unless your Str is in the upper 40's (or you get Strength Surge) it's ALWAYS better to just whip out your weapon and smash most things. For example, a good wooden door has a Break DC of 23. You'd need to roll a 17 to break it. Or you could whack it twice with your hammer, hitting unless you rolled a 1, and dealing 3d6 + 16 ⇒ (2, 5, 4) + 16 = 27, which smashes it in one shot.

Just an FYI I assumed you burnt commoners near the edge of the mob so you didn't risk accidentally setting the courthouse ablaze.

They tried to BURN DOWN and destroy a building to get to a creature because they KNEW the trial wasnt going how they wanted and KNEW that the way things were it was likely the Beast could have been innocent. We gave them a chance to stop and some chose to leave. Sarenrae is STRICT on these matters, everyone deserves a chance but once they tread upon it that is when it comes up to fate and action.
