What exactly is the damage table for huge monks? Their progression is unlike any other chart and my best guess is that it goes 1d10 2d8 2d10 3d8 etc. Any other thoughts?
There is no damage table. You can look at the improved natural attack feat to find the next step up though.
Benefit: Choose one of the creature's natural attack forms (not an unarmed strike). The damage for this natural attack increases by one step on the following list, as if the creature's size had increased by one category. Damage dice increase as follows: 1d2, 1d3, 1d4, 1d6, 1d8, 2d6, 3d6, 4d6, 6d6, 8d6, 12d6.
A weapon or attack that deals 1d10 points of damage increases as follows: 1d10, 2d8, 3d8, 4d8, 6d8, 8d8, 12d8.

This was done be increasing the large monk's damage by one step. It's unlike the normal progression but that's because a medium monk's unarmed damage goes from 1d8 to 1d10 at 8th level.
Gargantuan would be:
3d6 - 4d6 - 4d8 - 6d8 - 8d8
Colossal:
4d6 - 6d6 - 6d8 - 8d8 - 12d8
I have to say, a colossal dragon with monk levels and Greater Vital Strike might be fun, especially if he has access to Righteous Might and Strong Jaw.

I recently played a Monk/Druid who would wildshape into a huge elemental, cast Strong Jaw, and hit people for something like 6d6+26 with Power Attack. He had a base unarmed strike damage of 1d8 increased to 3d6 for being huge.
Based on "Table: Tiny and Large Weapon Damage", I think that the Huge Monk progression should go like this:
Level / Damage (Huge Monk)
1st–3rd / 2d6
4th–7th / 3d6
8th–11th / 3d8
12th–15th / 4d6
16th–19th / 4d8
20th / 6d8

Weapon size can be a confusing topic, especially given the Monk's uniquely wacky damage progression. I'm reasonably confident in my numbers, but the significant point here is really that getting bigger can provide an enormous boost to base damage for unarmed strikes.

Your numbers are right (I forgot levels 12-15), but are strange nonetheless. The average damage progression looks like this:
7 - 10.5 - 13.5 - 14 - 18 - 27So, for seven levels there is nearly no increase.

Something to keep in mind is that what the monk's progression does is entirely irrelevant to sizing them up. It wouldn't matter if they instead went from 1d6 to 2d4 to 1d10 to 2d6 as their monk levels went up - it's whatever they're currently at (as modified by a monk's robe) that gets sized up.
That being said, there's specifically a weapon size table which you can use to "grow" a weapon, which is the one Devilkiller linked. That's what I'd suggest using to determine it.
