Is it defined anywhere what happens if a weapon with deadly gains another instance of deadly?
For example, a gakgung with deadly d8 gains deadly d10 from a monk's diamond fists through the monastic archer stance.
The obvious expectation is that it just increases the die size, but it'd be pretty neat if different deadly die sizes could stack like multiple versatile traits.

You would use whichever Deadly trait has the higher die size.
You would only increase the base weapon damage die of the weapon once, not twice for having Diamond Fists if the weapon/unarmed strike already has at least one of the two listed traits. ==> "Any that already had one or both of these traits increase their weapon damage dice by one step." ==> The weapon's base damage die increases only once if the weapon already has one/both of the listed weapon traits (Forceful & Deadly d10)

An example of a specific rule that makes an exception of the general rule of not being able to increase the size of a damage die more than once is one of the revolutionary modifications for a weapon innovation of an inventor.

Your innovation gains the deadly d8 trait. If your innovation was already deadly, increase the die by up to two die sizes (d6 to d10, d8 to d12), to a maximum of deadly d12"
