So, I have been asked to GM at a local convention, and there are not a lot of people who play Pathfinder 2e (a serious bummer) but lots of interest. I would be running two sessions of 3 hours each across the course of the day, with a 1-hour break in between.
Each session will be standalone.
I would like to use pre-generated characters and have the adventure be a one-shot that will fill the three hours. Can you make any recommendations on a suitable one-shot that might fit the bill? I don't have any experience with PFS -- can I just use one of those adventures?
Any suggestions would be very welcome.

All of our Series 2 quests are low-level 4-6 player adventures that run 2-3 hours in length. You can use the Iconic Pregenerated Characters in any of these adventures!
We also released a few Pathfinder One-Shots which include four pregenerated characters tailored to the adventure. You might also want to check out the Free RPG Day adventures, which are free and also include four thematic pregenerated characters.

The suggestions Alex Speidel made are excellent. The Free RPG Day adventures are great fun. If there are lots of players unfamiliar with Second Edition, I might recommend the Pathfinder Trials. It's very newbie-friendly, though you might want to skip one combat if time is tight.
The Quests are also great recommendations!

Honestly, I've had a lot of luck with the very first series 1 quest. A little roleplay up front, with some lessons on the Pathfinder Society. A chance to introduce exploration mode with a hazard to follow. Finally, there is a good fight option in there. Scenario has a few variable choices for GMs too.
